My husband and I went to Longhorn Steak House on Sunday. We shared a 10 oz. New York Strip Steak. It comes with two sides so he got broccoli and I got jasmine rice. The we added their strawberry, pecan and feta salad. It was absolutely amazing. Actually, everything what quite delicious.

I knew I would be making Calamari Stew for dinner on Monday night, but I was thinking about what to make with it. All of a sudden the strawberry, pecan, feta salad popped into my mind. I had all of the ingredients … well except Longhorn’s version had red grapes, which I didn’t have … but was sure it would be just as good without them.

Strawberry, Pecan and Feta Salad with Strawberry Vinaigrette
Yields 2 servings for the salad; approximately 1 cup for the vinaigrette

Ingredients
For the Salad:
1 head romaine lettuce (washed, dried, chopped) 
4-5 fresh strawberries, sliced (or more, if desired)
10-12 mandarin orange slices (or more, if desired)
1/4 red onion, thinly sliced
1⁄4 cup toasted pecans, chopped
1⁄4 cup crumbled feta cheese (or more, if desired)
For the Vinaigrette:
1 cup fresh strawberries, hulled
1/4 cup balsamic vinegar (I used white balsamic)
1/4 cup extra virgin olive oil
1 teaspoon mustard (I used stone ground)
1-2 teaspoons raw honey
1/2 teaspoon thyme
salt and pepper, to taste

Directions:
In a large bowl toss lettuce with the strawberries, orange slices, onions, toasted pecans and feta

Add vinaigrette ingredients to a high speed blender and blend until well combined.

Plate salad and serve with dressing on the side or toss.

Serve immediately.

Store remaining vinaigrette in mason jar for up to one week.
